Chickpea & Egg Salad

Chickpeas are a great source of fiber and many of the essential vitamins and minerals vegetarians and vegans are deficient in. I've paired the iron and zinc rich garbanzo with protein packed eggs to make this superfood salad.

I prefer my egg salad served open faced on toasted rye but for a lower carb option, wrap it up in some lettuce or serve with sliced red peppers and cucumbers.
